Black Sesame Cake with Matcha Buttercream & Rice Paper Sails

And just like that... more cake! This is black sesame sponge filled with layers of matcha Swiss meringue buttercream and matcha colored American buttercream on the exterior, finished with matcha stained rice paper sails painted with edible gold, and finally some gold leaf.

I used the ombré and watercolor techniques with lighter and darker matcha colored American buttercream to finish the cake and went with a rough edge. A little over the top, and truth be told, my favorite version of the cake was midway when it was subtly watercolor painted and the sails were a pre-gilded pale green that looked like seaweed arching and waving in the current, but wanted to try out some different techniques here, and was not mad at the abstract art end result.

Finding a gluten free black sesame cake recipe that could work as a layer cake proved a bit of a challenge so I ended up adapting Mochi Mommy's recipe using my own gluten free cake flour blend (plus a couple of secret ingredients) and ended up with a moist cake and a nice light crumb. Ate some and shared some with friends, just the way cake should be.
